If you are looking for a great Sunday dinner or something special to make for company try this. It will melt in your mouth! My hubby loves the Brisket at Goodwood. So we decided to make our own... Hello! This is a lot better! Trust me! I got the Brisket at Costco. (They usually have them in stock in the meat department.)
~Ingredients~
2 tablespoons chili powder
2 tablespoons salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ground black pepper
1 tablespoon sugar
2 teaspoons dry mustard
1 bay leaf, crushed
4-10 pounds beef brisket, trimmed
1 1/2 cups beef stock
Directions
Preheat the oven to 350 degrees F.
Make a dry rub by combining chili powder, salt, garlic and onion powders, black pepper, sugar, dry mustard, and bay leaf. Season the raw brisket on both sides with the rub. Place in a roasting pan and roast, uncovered, for 1 hour.
Add beef stock and enough water to yield about 1/2 inch of liquid in the roasting pan. Lower oven to 300 degrees F, cover pan tightly and continue cooking for 3 hours, or until fork-tender.
Trim the fat and slice meat thinly across the grain. Top with juice from the pan.
Right out of the oven....Mmmm the smell is fantastic!

Again a Costco find. I purchased the bag of mixed fingerling potatoes. They are pretty good. The bag includes a mixture of red, purple, white potatoes. I also added sweet potatoes, onions & carrots to the mix. Delish...
~Roasted Vegetables~
Pre-heat oven to 450 degrees
On a cookie sheet pour 2-4 Tablespoons of good olive oil (enough to lightly coat your veggies)
Slice your desired amount of potatoes & onions & carrots and place on your cookie sheet. Sprinkle with Kosher Salt and Fresh ground pepper. Toss veggies in olive oil coating evenly. Add fresh rosemary.
Roast for 30-45 min until tender. Turning throughout with a spatula.

My husband Bob loves brisket but I have never attempted to make it for him. Looks great and bet the pictures don't do it justice. Thanks for sharing!
